We could agree that putting ketchup on steak is bad. It doesn’t mean it is happening all the time and the government should outlaw it beyond what it already has

Good question.
Because of the magnitude attached to making this decision. 1) I've known several 18 year-old people who were incredibly immature, and 2) At 18, a person could still be strongly under the influence of a parent or teacher. This is a life-changing decision, and I want the person who will be making this decision to be as free of outside influences as possible.

A male is a human born with a penis. A female is a human born with a vagina. The end. Anything else is just a mistake of nature (hermaphrodite) or an emotional/psychological issue.

Yes, it's called a hoodectomy (reduction of the clitoral hood). While routine male circumcision can be performed for broad public health reasons (such as reducing the risk of certain sexually transmitted infections), there is no medical or public benefit for female circumcision, nor is there any religious reason for it (in at least any religion I am aware of).
In other words, female circumcision is purely cosmetic but it is not done with the goal of lying about biological sexes.

I don't disagree. I also don't disagree with adults being able to do to their bodies what they wish. For me, the line is trying to push it onto kids (whether directly through the John Money method or indirectly by just avoiding talking about it being an emotional/psychological disorder) or the demanding that others must buy into a dysmorphic's LARP.
