In the thread below, I put a recipe for crawfish beignets and sauce. It's easy. Made with pasta and you can make them ahead of time and fry them just before serving. The recipe makes a lot of them. You can half it or whatever.

Thank you gris gris. I made the crawfish beignets and the first guests will arrive in about ten minutes. They really came out great. Scrumptious ... thank you so much.

I'm so glad you were brave and gave them a try. No credit needed here. I love to share recipes and the fact that you and your guests enjoyed them is good enough for me. You obviously did a good job making them. They're a good start to a party because people talk about them since they're so different. Sort of gets things rolling. My Mom always says if you have a great starter and a great finish, you'll be a success regardless of what's in the middle unless it's awful, of course. Thanks for the report.

Turnbull melba toast
Heirloom tomato, skinned and cut into rectangles
Fresh mozerella, cut into rectangles
Fresh basil

Put cheese on toast. Put tomato on cheese. Put basil on top. Drizzle with olive oil and salt and pepper. Serve.

It's too late now, but a very easy and forgiving app is bacon wrapped water chestnuts. You just need to make sure you buy them whole and not sliced, cut the bacon so that they wrap around once, secure with a toothpick, then whack them in the oven on a baking sheet until the bacon is done to your liking. Easy peasy.

Another great & easy app, for your next party maybe, is bacon wrapped cream cheese stuffed dates. Make a slit in the date & add cream cheese, or any cheese really, & wrap the date with a 1/2 slice of bacon, secure with a toothpick. Throw in oven until bacon is cooked. This is a VERY IMPORTANT part of the recipe...allow to cool before you eat-molten dates are 1000X's worse than pizza palate!

SALT POTATOES -

Easy - only 5 ingredients, if you include the water you boil the potatoes in.

Ingredients - 2 containers Morton's salt (in the blue canisters), 5 lbs. small red potatoes, sour cream, and Knorr's vegetable soup mix.

Bring pot of water to boil and add salt and potatoes. Boil until tender. Use a slotted spoon to lift the potatoes out of the water and let dry on a paper towels. As the potatoes dry, the salt will crystallize on the outside of the potatoes - making them look frozen.

Mix sour cream and soup mix (you can use any dip you want, really) and serve with the potatoes.

Presentation: I like to put a box of ice cream salt on a platter and put the potatoes on top of that (with the dip in a bowl in the center of the platter and the potatoes surrounding it). This gives the impression that the potatoes are frozen and sitting on a plate of ice crystals.

Literally as easy as boiling potatoes.

Meat Dip

1 can rotel
2 cream cheese
1 jimmy dean sausage, browned.

Mix it all together, put in mini crockpot to keep hot. Serve with club crackers.

that's a guy's meal - meat, cheese and something to mix them in!

I volunteered to cook for some friends when they have their NCAA finals party. They'd probably love the meat dip. Sour cream chicken enchiladas will be the main course.
