Tips for smoking a gator?

I guide alligator hunts, so take it from me:

Clean up fat from meat
Wrap in bacon
Wrap in foil
Set smoker to 225
Put in smoker
Cook low and slow for about 5 hours
Remove foil
Spray with Cajun Blast
Smoke for 30 more minutes
Pull off smoker
Slice
Feed to dog
Order a pizza





Seriously though, all our clients want gator meat, and my best advice is cook down in a sauce piquant or the like. It's a great novelty meat, not the best table fare. Got no real advice for smoking


Let us know what you do and how it turns out

I bbqed some gator legs the other day, coated the legs in a brown sugar and bourbon seasoning mix for 8 hrs, offset grilled on a weber kettle grill for 25 mins flipping every 7 mins or so and then glazing them in a buffalo wing sauce. Only thing I'd do diffrent next time is a second glazing and an extra 10 mins on the grill.

Slice into strips, season and batter like your catfish filets and deep fry. Smoke a butt instead.
