i personally toss em, but one of my friends insists on keeping them. my theory is they're the last fish God created and he was ready to head to the house so he just threw a bunch of bones in random places to make it a pain in the arse to clean then threw on the funniest choppers he could find.
DAMN BAIT STEALERS!

about 8 years ago we went to SC to visit my sister and her family. Went to the hunting island pier up from Beaufort.
The main thing biting was sheepsheads. right next to the columns. At first all they did was steal our craps. But after talking to some folks that was catching them, we figured out the bite. I started fishing just like I was worming fishing for Bass. Caught several up to 6lbs. Fun fish once you figure out how they bite.(hard to explain, but when you think he's there, set the hook:)
We went back to the house, cleaned them and had dinner. Great tasting fish. Would love to get back and do that again.

SHeephead is a good tasting fish to me and I've eaten a ton of fish in my lifetime. And cleaning them isn't the easiest but can be done with a little practice.

Tough to clean, very nice white meat. Clean them backwards with an electric knife just like a tiggerfish. Served often as Bay Snapper until the Federales pointed out that was false advertising.

keep them only was times are tough. and when we do keep them, only keep about 10 or so. they taste decent but pain in arse to clean.

I keep them. They are just hard to clean IMO.

Many restaurants use sheepshead as "crabmeat" toppings.... or the emeril's that used to be down here called them local saltwater bream or some shite like that

They kinda have an asston of rib bones. If you cut from the back yu have to go shallow at the neck and get deeper as you go back. Meat is great if you feel like cleaning them.

Nothing wrong with that fish at all.

I was there 2 days ago( Nephew's Marine graduation). Anyway I love that natural beach, very beautiful.

Yes, I always keep them. Don't use an electric knife. Just takes a little practice. This is how I do it. LINK

I do too, even when I went though bootcamp myself I like the area. After going back several times throughout the years it's one of my favorite places to hangout and fish. Got my first Tarpon over a 100lbs there right off of Paris island.
congrats to your nephew.

They are decent fish to eat but tricky to clean. An old man I use to fish with out at Seabrook Bridge in N.O. told me to wrap the fillets in cheese cloth and boil it in crab boil to make imitation crab meat.
Definitely watch out when cleaning them! I stuck my hand with a fin once. About a quarter of an inch of the fin broke off in my finger near the knuckle. Had to go to the doctor to have it cut out.
