Rooster Recipe?

I have no idea how he got to my place or whos rooster he was but I killed a rooster on the dock at 4:45 this mornin. I should have been getting my beautyrest but that fricker was too noisy. He's plucked and in the fridge now.

Would a "Hen" N Tasso Sauce Picante recipe work or will he be tough as a rubber boot.

Any suggestions from the country boys on the OB?

He's gonna have a lot of fat on him. Makes a good broth. I make rooster noodle soup with them.

My father in law made rooster gumbo for Christmas last year. Damn it was good. I had never had rooster so didnt know what to expect but it was by far my favorite gumbo ever.

Nope, I live in a condo and I am sure most my neighbors could hear the rooster too. I figured shooting a gun at 5AM might wake more folks than the rooster had so I used a landing net and a crowbar. To my surprise, the thud of a crowbar on a wooden dock echoing across a harbor is even louder than a gun in the wee hours of the morning.

He's cleaned and waiting on my gumbo.

Brine it before you cook and it will get tender.

Boil 1 quart of water and dilute a 1/4 cup of salt, when the salt is diluted add another quart of cold water and mix to cool your brine. Soak rooster in brine for 8 hours, cook however you want.

Indeed it would. Just will have to cook it a long time. How long the spur is will give you an idea how old/tough it will be.

My dad believed that too (as do many) but that's simply not true. I've cooked many a young roosters in a gravy and they were just as good.
