I apologize for being so blunt, but a 12 gauge for a 7 year old is absolutely laughable. I used my 20 until I was 16 and it was never really easy to use until I was probably 14. Given it was an Ithaca pump so an Auto would be lighter.

But I had many a days dove or duck hunting with a 20 gauge where I had a heavily bruised shoulder after only around a box of shells.

I'm not really sure a .410 is worth starting wingshooting on. Squirrels sure. But your pattern with a .410 is so small. An auto 20 gauge youth model is likely the way to start.

Its not just the kick either, its the weight of the gun. No matter how big your 10-12 year old is, they still won't be able to manage the gun like an adult. After a certain amount of use, your kid will get tired and start poor habits.

20 will work fine. My son has been shooting .20 ga 11-87 since he was 7. As long he can properly shoulder it and the LOP is good he’ll be fine.

3/4 & 7/8 oz is what I’d recommend until he gets a bit older.

My 9 year old is big for his age 4'9" and 101 pounds. He killed his first deer this year with a 50 cal muzzleloader. That being said there is no way I'm letting him shoot a 20ga yet. If you don't want him to shoot a .410 that's fine, but a 20ga will leave a bad taste in his mouth.

It really depends on shell selection. There are low recoil shells on the market, you just have to hunt for them...
