Tried them all hundreds of times. Freshwater fish do fine vacummed sealed. Speckled trout not so much . I freeze trout in water and they only good for 6-8 months before I give them away. Redfish halfshell in water good for over a year.

Redfish slabs on the scales will get vaccuum packed because they're big and keep better while being easier to store in the freezer. Can't allow the rib bones to make contact with the bag because it will puncture. I put 2 slabs together, meat touching meat to prevent them puncturing.

Yep, or I cut the ribs out and eat them as a snack and freeze the filets, which are then 99% boneless.

You can suck ALL the air out of a zip lock if it has water covering the fish.

I have a commercial vacuum packer so I use that. But before I had it I would use the cheapest rubbermaid containers and make sure the filets were covered in water. If some happen to stick out above water you can trim off before defrosting pretty easy to remove freezer burnt sections.

All fish and shrimp are frozen in zip lock bags in water with all air removed and laid flat on the shelf to get them as thin as possible.

My method for all fish, deer steak, and peas/beans. Mainly use gallon bags and you can get them flat & stackable.

Glazing them in ice is life changing.

I can freeze them individually then just put all the filets in one big bag and pull as many out as I need. I hated always having too many or too few when I froze them together in a ziploc.

Individually frozen filets are the way to go.
