My antelope meat is smelling a little funny

I cant decide if I screwed something up and it is spoiled or if it just smells funny. Have never eaten or messed with antelope before. I cooked a couple pieces and it smells funny but not necessarily bad.

Anyone messed with antelope a lot.

Trying to make some chili.

A guy cooked some at a men’s supper club one time. It smelled like rotten arse.

I’ve heard antelope can smell taste vastly different based on how fast/slow you skin it. Like you can cool it too fast And also certainly too slow.

It has a different smell. If it came from sagebrush country, it can be a bit strong. I think it’s fine.

The couple pieces I ate tasted about how it smelled. Damn near like a cow pasture, screw it, I'll see how it turns out.

I killed a doe last year. Wife said the ground meat smelled funny but tastes great after cooking. I even ripped the stomach open while gutting.

Not spoiled it just smells bad. Much like regular goat meat. Damn near couldn’t get the smell out of the wood handle on my skinning knife. Only use the disposable blade skinners now.

The key on how to limit the foul smell is to skin the animal out as soon as you can after the kill. An hour is too long.

We gutted it immediately and stuffed cavity with ice and its was fairly cold.

Obviously waited to long to skin I guess.

Will it make it taste bad? I am cooking it now and it didn't smell when I was browning the meat.

Their diet has a lot to do with flavor. Them sagebrush fed goats taste a lot different than the ones from Ag fields. If being honest, antelope meat even when at its best smells a bit funky.

Field care is also critical. When I first started hunting them the locals really drove home getting them gutted and skinned as fast as possible.

Well the mrs and I are eating a bowl and its taste pretty alright. I didn't do my normal chili incase it was bad and had to be thrown out.

If I can get into my photobucket account I will post some horn porn as a appreciation.
