I grew up using oil on Arkansas stones, and I still use them. I have soft, medium, and hard black stones. Like you said, the angle needs to be constant. This gets much easier with practice.

I use a chefs choice and a steel. Does a really good job and I can have a sharp knife in well under a minute.
The other electric one listed looks neat, but seems like it would take a little longer to get it done.

I tried several methods and gadgets over the years without much success. Some are more tedious and time consuming. Several years ago I used a Furi diamond fingers and have used it ever since. It puts a 20 deg edge on with the quickness and it is very compact. It has coarse, med, and fine finger choices but I just use the medium.

Worked on mine. Just remove the guide and set the belt forward so it grinds horizontally and clamp the blade to the bench top. These things remove material quick so use a light hand.

I use a regular diamond stone and water. The one I have is from cabelas and is very coarse, which I like.
If you have a hard time with it there are lots of idiot proof sharpeners out there that work very well. Pretty much anything that holds the angle for you will work fine for most knives.
Odds are you'll be surprised that the angle is as steep as it is. When I see people struggling sharpening a knife, they've almost always got the the blade too flat against the stone.

I put a gerber skinning knife on my dads worksharp just to try it out. Followed the directions with the belts. It was dull as hell.
I skinned my sons deer with it last week and it was fantastic. I am a worksharp beleiver.

I try to pay attention to the blade edge when it sits on the stone. Make sure the cutting edge is on the stone. As the knife gets sharper I get softer. Having said this I could not get my knives past a certain point until a friend told me to finish up the process with a steel.
I can get them to shave every time now.
