Don't you know a croaker/sheephead/carp hybrid when you see one?

For real though... what is that?

I hear you, on the big females I usually just cut out the eggs and fry up.

Gar is where it's at. Total PITA to clean, but worth it. Scraping gar meat and drinking beer is a mighty fine evening.

My dad liked it. Watching him clean one cured me of it forever.

Bought a gar patty sandwich last year in Marksville. Ate 1/2 of it and threw it out the window. Felt guilty knowing some poor possum was going to end up eating it.

I won't really keep anything over 3 or so. I may not even keep a 3 if I have a box full of smaller ones. I usually deep fry but have pan fried and sauteed with olive oil in a pan like I would with snapper or tilefish before an wasn't mad at either result.

Now, if it's big enough to mount, I'll keep it for a skin mount cause I'm an a-hole

That, my friend, is a surf perch. Plentiful in southern california near any rock jetti baited with mussels, clam and sqid bits. They are pretty good eating!!
