Catch a saltwater one that is way over 6'. One fighting SOB that slimes up everything. Nasty bitch at that.

I've only seen them caught on rid n reels a few times and it was always someone else I was with. The reaction can be pretty damn hilarious. Many folks have never had encounters with them and the shock factor is pretty high.

I have never seen them til a few years ago at my camp. The women like to fish all night off the dock and started screaming one night when they caught one. Since then they catch them all the time. I throw a few casts and catch reds and trout and tell them they just don't know what the he'll they're doing

You guys should try encountering some of those in an underwater cave. I used to scuba dive several caves and caverns in Florida and they are full of eels.
They are actually really interesting in the water, but can spook the hell out of you. We thought they were posturing up to us and hitting our heads out of aggression, but we figured out that they were mesmerized by our mask lights. Once we turned those off, we would use our handheld flashlights to guide them around. I actually look forward to interacting with them in caves.

I have had them smoked, roasted, and boiled in a light fish broth. Smoked eel was ok, but the rest were uninspiring.

I can honestly say I have never seen One of them while fishing. I gues they don't grow in the ponds of central Louisiana!

Looked like an Amphiuma. Kids catch them in roadside ditches all the time. However, when looking for their tiny legs, i see fins, so it looks like that is an actual fish. I've never caught a freshwater eel before. Where was that?

Those are American eels. They spend much of their life in freshwater then migrate to the Sargasso sea to spawn.
Fillet them like catfish and fry the same way. They are better than catfish fried but not quite as good as bass and sacalait.

Except for sacalait, all freshwater fish i eat taste the same to me. Fresh vs frozen makes a bigger difference than the species IMO.
Saltwater fish I can tell though.

Hooked a big gator in the hind leg on a trout line once. Almost hade a heart when I pulled that guy to the surface from a pirogue. Saw some Japanese eating eel livers in Tokyo restraunt once. I passed.
