I'd probably try to do deer steaks on the skillet, seems like it would dry it out less, and deer is pretty dry to begin with

I got a black iron one for Christmas, I've been cooking everything on it I love it. Deer burgers on the skillet is heavenly.

Cut any of it into steaks. Tenderize a little with a mallet. I marinate in Dale's but only for an hour or two. Grill. Be happy.

I grilled some backstrap the other day. Marinated and seasoned and cooked very quickly on the grill. They were pretty damn good.

I grill my deer hindquarters steaks I like to cut them in strips, season, pound with tenderizer and cook to medium rare on the grill. The hindquarters are as good as the backstrap. If you cook a little too long it will dry out quickly. Put and onion and pepper in a piece of steak roll it up and grill like that with a toothpick to hold it together. Cream cheese if you want it.
