Anyone use a good deer processor near New Orleans that processes smoked deer sausage? I usually make my own but don't have time to do it this year.

I used to use Bergeron's in Port Allen when I lived in Baton Rouge but it's a little drive now.

Pete Giovenco in St Rose. Deer Depot is the name of his business. He is one of the, if not the best anywhere.

it is about an hour away from you, but I would head to the whitetail butcher shop in independence, la...honestly, it is the best damn deer sausage that I have ever eaten...

I know a good number of folks that drive from Mississippi and even Monroe to get their sausage made...

Preach on. This man don't lie, no. Best in the area...until you cross into the basin, then the competition starts.

It's good sausage, but it's not made from the deer you drop off.

I've been driving by the deer depot lately and each time I do I am impressed with the cleanliness of his shop and yard.

so, they just give you the right amount of meat and don't worry about which deer belonged to which person or what?...

That is what I was told by someone who worked there for several years.

That's no too much of a surprise. If they aren't taking % ratios and just sausage style, I would assume a lot of places do that. The jalapeño cheese from WTBS is insanely good.

Deer Depot or Emmett's on Jefferson Hwy in Elmwood. Both do excellent work. Deer Depot's tamales are killer.

The Sausage Shed in St. James Parish. Small shop, quick turnaround, best sausage around, and they never batch process. Spinach and feta sausause is awesome!

pete's is good. expect to pay a little more. I liked what I got back from him. fyi, I have heard a few bad stories about him inflating the price or being accused of switching deer. I didn't care about what I got back, it was good.

Cutrer's in Kentwood. Incredible product - astonishingly affordable. Also, unlike Bergeron's very organized and serious about deer you bring is deer you get back.
