I meet a lot of people who say this but usually when I dig deeper I come to find out they've probably only ever had it overcooked or prepared without the fat, which is what makes duck great.

Pan-seared, skin-on, fatty duck breast from a woodie, wigeon, pintail, or clean eating mallard is some of the best meat I've ever eaten when cooked rare.

Now if you cook it all the way through, it tastes pretty rough.

And I'm in the "I don't get the love for catfish" boat. I'll eat small channel and ops from moving water or lakes, but farm pond channels taste mushy to me and I'd rather eat bass, bream or sacaulait every time over a pond catfish. Yet I have friends who lose their mind if I bring them some catfish I catch but shrug their shoulders at bass and bream fillets. Don't make no sense to me.

The whole book sheepshead in crab boil in cheesecloth is what I am talking about you are doing that to mask the flavor of the fish You could put any fish in crab boil and it would be good. It will taste like crab boil


Same with marinating wild game for two days and wrapping it in bacon and grilling it. You are masking the natural flavor for a reason

Agree with bass also. I am not a fan.

Catfish not cleaned properly is bad. One sliver of bloodline or fat is terrible

Eating small bass. Between the three ponds in my family we catch hundreds of 10-12” bass a year to keep them thinned out, alongside lots of bream. I can pick the bass out of the pile every time. They aren’t terrible but are more gamey than the bream and are a pain in the arse to clean with the needle bones along the lateral line.

I think trout are more subject to taste like what they’ve been eating since they live fast and die young. Seems like trout caught running shrimp are some of the cleanest tasting fish I’ve ever had.

lol i don't fish for trout anymore. I like small reds on the half shell. Most off shore species. Snapper, tuna ling, I eat the hell out of salmon, bream, bass, flatheads, still have a ton of amberjack from a offshore trip last year, flounder, tripletail. I made the comment about sakalait because I don't get the hype....I think they are great eating but so are bream and I know how to catch bream lol.

who the frick rants over sheepshead? Most people only keep them if specs and reds aren't cooperating. That being said, if you want to deal with cleaning them they are great for imitation crab meat

You’re doing it wrong. I bake my lobsters (usually stuffed) and they are always tender and flavorful. My wife isn’t a fan of lobster in restaurants, but she loves them at home.

ETA: Regarding alligator, it’s a night and day difference if you tenderize it. Not tough or chewy at all if you beat it with a tenderizing mallet. Though to me alligator is more of a novelty than a regular meal. I might fix it if I have an out of state visitor, but there are just too many other options that are better on a regular basis.

They are probably the most fun thing in the world to hunt, but they're a pain to clean, and don't add much but a bunch of bones to whatever you're cooking.

I'd rather just go out in the woods and shoot em with a paintball gun than deal with trying to clean and cook em.

I can understand most everyone’s point, but specks? Man...it’s like not liking chocolate!

Duck can be gamey, but I’d be willing to bet you’d find a new appreciation for it after you tasted my duck and fresh sausage gumbo.

Lobster for reasons you stated. Never have understood the draw except for pretentious frickers who love spending $100 for it at a restaurant to look sophisticated.

Gator meat is hit or miss for me.

The absolute worst in my opinion is escargot, though not technically a fish or game species. Nasty little things that, like lobster, need something to dip them in to make them edible. Tried it once at a restaurant when a friend ordered it and really didn't like it.
