I’m cooking my wife’s favorite meal deer stew. Along with some frog balls (sweet peas, eggs, and mayonnaise salt/pepper) with French Bread on the side. I’m sipping on some woodford. What’s your favorite venison dish?

What do you call a deer “stew”?

I like to braise down a neck roast with onions, carrots and potatoes in beef stock and red wine. I’ll add mushrooms too if I have them.

As long as he’s not talking about a stew like a meatball stew, roux. At least not for me.

Always been partial to slow cooked backstrap cuts smoked with pecan wood. Then whatever vegetables... you just can't go wrong

I make a roux. I do cook it in a gravy on occasion. But she likes it in a roux.

Pretty simple for me. Yesterday I cooked a ground venison spaghetti w/ mushrooms, potato salad and garlic bread.

A deer neck or deer rump cooked down with some wild shrooms off a dead willow! Hard to beat that.

backstrap on the grill, jalapeno and cream cheese stuffed, wrapped in bacon.
or thick backstrap cuts (2-2.5") and treat like a filet. salt/pepper, Cast iron sear, finish in oven to med-rare.

I like shoulder and shanks cooked down for barbacoa and served with good cheese, diced onion, cilantro and avocado on a taco.
I also like it grilled rare or medium rare and sliced thin...

It's crazy how some folks look past the neck roast.

I've got two large roasts from a big buck in my freezer. Its going to be a pain, but I've decided I'm going to fillet it off the bone before cooking.
