I used to use Matthew Courville's in Carencro before I started doing it myself. Everything I've gotten made there was great. He keeps his place really clean, too.

Get some good knives and some stainless bowls and a couple good cutting boards and a 12 pack and a podcast or music. Vacuum seal your back straps, tenderloins, and cut your own sirloin and round steaks. It’s fun. Depending on how fast you are you might finish after only a 6 pack but better to have more than you need.

Bring your “for grinding” vacuum sealed bags of clean deboned meat to your favorite sausage maker that does next day or same day service or is known for not mixing people’s deer meat.

If you drive to Ville Platte, the prices are very reasonable.
I recommend Big Poppas Cajun Meats on the out skirts of Ville Platte.
You can also use Paul's Meat Market, Frank Fontenot's Meat Market, Bayou Chicot Grocery......

Acadiana Wildgame if you want the best and are willing to pay. That frickin Cajun Sugar sausage may be the best I've ever had.

I'm about to bring a deer to the latter fwiw

I bring most of mine to Adrien’s but I get the whole deer ground meat. Can’t beat the price. Call before you go

Chadley’s does a good job. His burritos are fantastic

Courville is way too expensive.

not the first i hear of Adrien’s. what does pricing run per pound on ground meat with ribeye fat or brisket?

I brought a 100# doe there quartered and got all of it ground meat for $65

Yup I agree. His stuff is good especially his deer sticks with the cheese but man his prices are crazy high!

I agree. Adrien’s doesn’t do smoked sausage, though. An call ahead as mentioned if the get to busy they stop taking them.

I recently used him but just got everything ground, half mixed 50/50 pork/venison, and the other half mixed 50/50 brisket/venison, all unseasoned, price was fine for what I got and turnaround time was only 3 days which I thought was pretty impressive.

I had fresh sausage done at LA Blues in Cecilia/Henderson. Very good flavor and top notch service.

No, sorry I meant used Matthew Courville/Acadiana Wild Game Processing. I've never tried Adriens, didn't even know they processed.

I’ve had two done at Best Stop this year. Both came out fantastic and reasonably priced.
