Deer Processing?

Trying to get some suggestions on processing my son's deer. I've used Tramonte's and Benoit's as of late and prefer the sausage I got from Benoits. I'm just looking to see what other people have used for possibly the best pricing, quality, and variety of products. It was about a 100lb doe. I have quartered up and ready to go. Thanks for any suggestions. I'm in BR and willing to drive within an hour but don't want to go much further unless it's really worth it.

White Tail in Independence is good enough to be worth the drive from BR. Don't know many places over there.

Heard Leblanc's in Morganza is great. Not sure how far of a drive that is for you

Full disclosure - my cousins own Mama Mannino's White Tail butcher shop in Independence, but it's worth the drive. While you're there, pick up a pack of marinated gator legs. Put them on the grill at 350 for 10 minutes. There are a lot of different Italian and Cajun meats for sale, and more options for your deer than you'll know what to do with.

i've gone to fortenberry's lately. my uncles and f n law been getting there stuff from white tail for a while and its always good. I may bring my next one over there.

I bought some deer sausage from the Francis in Saint Francisville yesterday and it was pretty good. I would love to find a quality place around BR.

Anybody willing to let me try some deer sausage from the above places? I'll trade my stuff I get made in Texas for a pack.

I've done Vine's and Bergeron's and prefer Bergeron's over Vine's.

Both were very good and very different from each other but to me Bergeron's stay's more juicy.

Green Onion, Jalepeno, and the regular smoked is all good.

IF you use Whitetail, don't get any smoked sausage. I had over 50# made off a big buck years ago and my buddy had a doe made into smoked. It was the WORST damn thing I've ever had from any deer. It wasn't smoked, it had zero flavor. I and my bud were pissed. Never been back and have never suggested using them.
Hope they've changed since then

I'm surprised to hear this. I'm an admitted food snob and their smoked sausage is always on point, even though I normally don't get it for myself. Maybe you got a bad batch? Regardless, I'm sure if something like this would've happened and you call them, it would be made right. They're great people.


Bergeron's is also very good. I've never had Catoires.

In my opinion sausage is the biggest waste of deer meat and money there is. You can take roadkill, grind it with some pork butt and spices, smoke it, presto you have sausage. I prefer my deer cut into steaks for grilling and frying and ground with beef fat for use in burgers, sloppy does and chili type dishes. But I have no idea where to get this around here as I do all my deer hunting north of I20.

This is definitely true. If you ask them about it they will usually just blow you off or dance around the question. Multiple times had buddies that skinned and de-boned their deer personally have pieces of bone in their sausage when they get it back...
Cutrer's in Kentwood has the best smoked deer sausage I've ever tasted but that's a bit of a drive from Baton Rouge.

I can confirm someone that worked there told my friend that was the case. That's as far as I can go.

Try Terry Sanders in Galvez/Prairieville at (225) 571-2722. He is part-time since he works at a plant, too. He used to (and still might) get his seasoning from Oak Grove Smokehouse. They told me about him when they stopped processing deer. We've been using him for about 10 years. Good guy and honest.
