Processing is part of hunting for me. I'll never understand the ability to shoot an animal, and drag it off to some guy to clean it up. Not enough time is no excuse.

The guy in Madisonville is awesome. He moved from the south shore a few years back. That breakfast sausage is insane.

I'm not far. Any details on this guy?

Have used DD, Saias, Armands and Fortenberrys in the past. A friend had some from Diamond J in Brookhaven that was excellent.

Preston Armond passed away earlier this year. Someone (woman) recently bought the biz and is running it basically the same way and has the same employees. I work at a USDA inspected meat processing plant and they buy a lot of their meat and trimming from us.

Same here. I enjoy planting plots, cutting roads and making sausage as much as I do the hunting itself.
It’s a family event when we make sausage. It’s a whole weekend but we enjoy it and the kids are learning how to do it.

Junky, care to share some sausage recipes? My boys got me a grinder for Christmas and want me to try my hand at DIY.

To OP, had some sausage my buddy had made at a place just north of Robert, and it’s the best I’ve ever had. 60/40, but it was a coarser grind and thin skinned. Absolutely seasoned perfectly

Order some Rebel Butcher smoked sausage seasoning. It’s ready to go and pretty much perfect for my taste. They are in Pearl, Ms but have it in several meat markets.

You are welcome. They also sell it at Vines in Centreville and Mccomb.
We’ve been using it for years and add nothing to it.
