My daddy woulda beat my arse for breasting out ducks

I have friends that get mad, but I have breasted no less than 200 ducks this year. Didn't pluck one.
Who's really plucking 20-30 ducks after a shoot? Not me.

Unless I'm really short on time, I will take the breasts, legs, heart and liver out of every duck (throwing out individual parts if they are shot up too bad). Sometimes I keep the fat/skin to render out the fat. I guess I just like to muck around in the kitchen with all the stuff after duck season. You can make sausage, pate, duck prosciutto, seared hearts, duck rillettes, etc on top of the normal pot roast or duck bomb recipes.
If the duck is in real good shape I'll pluck and keep whole, but most times I'd prefer to have the parts separate so I can have all the options at hand. I do like keeping the skin on the breast if there's a fair layer of fat. If it's really skinny tho I don't bother.
And no the shite I make doesn't taste like gourmet (it's wild duck, good luck), and I'm under no delusions about my ability as a chef. It is fun to try new shite tho.

Here, here. I pick some to give to friends early in the year, other than that it's breast city. If your not using the innards, why not breast. I did start to breast with the skin on though.

Breasting with the skin on is a good alternative to plucking IMO. Makes for much better dishes too

Yeah if your cohorts don't clean their own ducks you really just run out of time to do anything but breast out. I blame them tho.

Dont be too hard on yourself. Most fine restaurants would prefer wild duck over farm raised bland tasting peking.

Better than throwing them away. I pluck/breast bout 50/50. Most guys I hunt with don't even eat duck. So, I'll take them. If I were just cleaning my own, it'd be closer to 80-90% plucked. My grandpa made us pluck and eat 100%. Hell, I was 35-36 yo before I ever plucked one.
I know their are plenty that just throw them away. Or clean 'em for their conscious and toss them. Hell, I think by law you or your family should eat every duck you kill. Numbers would be a lot higher if not for wanton waste of game.

Not eating ducks you kill is unimaginable to me.

If I saw a friend throw away ducks, or any game, I would change his ways or we would be friends no more.

Amen. I've choked down some pretty godawful stuff. It'll make you real quick at identifying mergansers.
Aside: substitute merganser breast for the liver in liver & onions. It's not bad.... if you like liver.

Why even hunt? This makes no sense to me.
Out of respect for the duck I pluck all the ones I kill. I like to smoke them or make sausage.

We went with a crew from around here one time. Killed 72 and some geese. My dad and I got our share and left. Found out from a kid with the group my brother was friends with they dumped them shortly after taking pics and showing off their haul. Dad loaded me up, we went and got them and cleaned them. Never hunted with them again.
Sad thing is, they hunt all the time and I don't think a damn one of them has ever eaten a duck.

I have gotten to the point now that I even hate freezing them. They will be eaten within a week of getting shot these days which means if it's been some good shoots, I am eating the frick out of some duck.

That is what is wrong with this country.… my dad would whip my arse if we didn't eat what we killed. I don't understand it sometimes. Makes me almost sick to my stomach to have a messed up breast and really can't do nothing with it. And that goes for any animal.
