We call 'em mudfish too. Choupique is the Cajun term for them. Fun to catch but I hate touching those evil-looking bastards. Looks like an eel.

I know guys that have mistakenly lipped them like a bass. Most wont do that again.

You can freeze it if you plan to fry it.

Batter them up and place them on a sheet of wax paper in a baking pan and freeze them. Once frozen, put them in a zip lock bag like chicken nuggets. Fry them just like chicken nuggets. That's the only way it will keep.

Primal fascinates me.

And choupiques are definitely primal.

I think they are the only remaining members of their family tree and they have been doing their thing for a gazillion years.

My old Nonc from Vacherie makes Choupique patties with them. They really good.

Spinnerbait or a buzz bait in shallow water really pisses them off. I catch a bunch in shallow water on a texas rig with a light weight and a brush hog

I like choupique better than gar honestly. Choupique are a pain to clean because you have to do it all in one day or it turns to complete mush. Best is catch them make the patties and cook the gravy all in the same day or vacuum seal the patties once you make them to hold them together.

It's family. Phylum is up the taxonomic ladder from family.

Species

Edit: just looked it up, they are the last extant species all the way up to Order.
