Let me guess, you either cook it down long enough until it looses all taste or you wrap it in back until it covers all taste..

You can cook it down. Whole ducks cooked down in a gravy or a sauce piquant are fantastic. You can also wrap in bacon and make duck wraps/poppers. They are likewise fantastic and are usually regarded as so by people who "don't like duck". You can also salt, pepper and grill medium rare. You can pan sear and glaze with a fig reduction or any number of citrus flavor. You can make duck sausage. Duck boudin. Duck confit. Baked duck stuffed with apples. You can simply dredge in flour and fry. The possibilities are really endless on how you can prepare wild duck. I would suggest Hank Shaw's book "Duck, Duck, Goose" for tons of ideas on how to prepare duck, both wild and domestic. Or you can be a clueless slapdick, put your stupidity on display and say "duck taste like shite". Just however you want to do it.

All those things listed can be made with possum, armadillo or skunk as well doesn’t mean it tastes good.

Deer tastes like shite, duck is much better.

At least with duck I dont have to mix it with 50% pork to make it palatable

I don't actually think duck tastes like shite, but I find it more of a camp food. And for some reason, I always like it better when someone else cooks it.

I also prefer deer more because of it's versatility. My wife makes fantastic lasagna, spaghetti w/ meatballs, meatball stew, tacos, burritos, etc with ground deer mixed w/ 10% brisket or ribeye fat. Then you still have roasts, deer steaks, backstrap, and tenderloins.

Back to main topic, grays and green wings are up, southeast La coastal marsh hunters rejoice!

Seems like a lot are bummed that it's like 38.9 million birds vs. 41 million from last season. Can assure you that the alleged 41 million didn't make a lick of difference last season with junk weather and insane rainfall spreading them out. Im getting geared up, others can do as they please.

I cooked a back strap a few weeks ago, was a big deer b/c it was about 30" long. Anyway, marinated in Allegro for 6-7 days, turned bag at least daily. Sprinkled with black pepper, grilled on a hot charcoal fire to med rare. You talk about tender, better than most beef imo. I ate on the damned thing for 2 wks.

Why the 2 down votes, speak your piece haters? I'm being serious, the meat was good.

Once you get past the notion that a duck can only be used for certain way, you will come to love it. just the other day i roasted some geese in a gravy to let it cook down ahd have used that meat for at least 6 different things so far. I have also taken duck and ground it with bacon since its so lean) and made ground meat and its killer. Once you break from the mindset that you have to use duck with bacon and a jalepeno, the world is your oyster... unless you just flat out suck at cooking

But that's my point exactly. If you make their bag limit 0, then you would have been a poacher 2 or 3 times. I understand it is everyone's responsibility to know your target, but every duck hunter I know would be lying if they said they were always 100% certain of the species in certain situations, particularly when shooting the second out of a big flock or at first light. If you make the limit 0, you will have a ton of good hunters unintentionally committing game violations.

It's just a no win situation.

The 2 times I've unknowingly shot pintail hens were:

1) on a small farm pond where I had hunted plenty and never seen a pintail, another buddy and I killed a pair of hens at first light that had landed. They were by themselves - no drakes around. They didn't make a sound coming in and I would've bet you money they were grays when we pulled the trigger.

2) on a big open lake where we could watch them coming in from a long ways away, we dropped a pintail hen out of a flock of probably two dozen wigeon. It was the second bird my buddy dropped out of the flock as he first picked out and dropped a drake wigeon.

I think Allegro and Dales intended purposes are as a quick, 30 minute type marinade. I can’t imagine how salty and backstrap would be after 6-7 days of soaking in it. But as long as you enjoyed it more power to you.

No offense man but you don’t sound like someone who has done a lot of duck killing. Certainly not one well versed enough to have survived the points system unscathed. Back then you had better be sure of what you were shooting at or your day was up and/or you were grossly over the limit. Not being able to distinguish between birds, in poor light conditions or not, is not excuse for killing the wrong bird. And the pretense that people might accidentally kill one is certainly no reason for WLF to not change the limit on a species.

The self righteousness in this thread is comical. You even admitted you'd unknowingly killed pintail hens in the past, yet somehow I'm the one who couldn't escape the point system. Alright dude.

People BRAG about mud stomping spoonies all the damn time. Heaven forbid someone actually admit that it can be damn difficult sometimes to ID birds on the wing.

It absolutely is considered. Outlawing killing pintail will 100% result in a lot of people inadvertently becoming criminals and will become a barrier to entry for new hunters who become scared to duck hunt for fear of killing a single bird.
