I believe it. I had talked to my buddy about his FIL who had left his wife for a Korean wife/Mail order. We discussed this for about 20 Min or so. I opened up Yahoo and the first add I see is about Asian women wanting love.

When you google (or search) for stuff online, that information is used to target advertise. When you use siri, that information is collected as well for target advertisement. Your phone can use the features that is used for siri (or whatever its called on other phones) to collect data for target advertisement. It's not like it is listening to you and is feeding that info to the government or something.

Definitely true. My uncle worked on this technology for years. He kind of refuses to talk about it but he's dropped subtle hints over the years.

Find a radio station or some podcast in a foreign language and set your phone by it for a few hours. See what facebook ads you get then. This has been reported before, this feature just isnt advertised for obvious reasons.

I work in a world that aligns with what you talk about. If you run google or facebook on your phone, it is sending back a lot of information about you. Not only are those companies getting that information, but 3rd party companies are getting some of that information.
Outside of listening, which does occur and has been verified, they also use tracking/beacon technology. We can track a persons trip through the store and tell how long they looked at a product. So we know what interests you and you did not say a word or search the web for it. Now we remind you how much you liked it when on the TD.com again.

Does that include if you aren't signed into your google account or have your location setting turned on?

I've had similar experiencea. Our phones most obviously listen to us.
