I’d highly suggest not to use a stain on pecky cypress. I worked on a piece with Goodwood Nola in 2017 using pecky. We sanded each pecky crevice, taped, and filled them with gold resin. Then covered the whole thing with multiple coats of 2 part epoxy to harden and level the surface. It’s a pretty easy application. Link to pecky cypress piece I worked on for reference

The only treatment was with butcher block conditioner

Sorry I missed this part.

Good choice btw. Another favorite of mine is pure beeswax. You can get a brick for $5 from nearly any local apiarist.

Sand it and cover it with an epoxy resin, then it won't matter what the condition of the wood below it is.

Here is a tip in the event anyone runs short of resin during off hours, etc.

Use colored chalk, chalkline chalk or even kids colored chalk for a dye. Just mix it in with easily found clear epoxy resin.

square whatever edges you like, but definitely do the side that will rest up against the wall. If you want a "live edge" leave the outside front.

Sand with 80 to 120 to 220 and then clean and wet all sides. This will raise the grain and hit with 220 again.... making it a glass like surface.

Clean and apply tung oil... multiple coats till it is not absorbing any longer.

Or do this... would look excellent as well.
