Which is why it isn't more prevalent.
I flew first class once when I was in college. Free upgrade because they screwed something up.
It was nice, but not nice enough that I would pay the difference.

Bigger aircraft do have more comfort and airlines each seem to have their own seating configurations.
Flew to Brisbane Australia in Premium Economy and it was awesome. I only had one other seat next to me. My seat even reclined into a bed. Better food than the economy had and they served us complimentry champagne.
The picture is the layout of a Qantas 747 I flew on that trip sitting in Premium Economy.

Some flights to Angola are 90% business class. They are nice.... except for the destination.

Air travel can be broken down into pretty simple options.
Poor people don't fly, or fly cheap airlines like Spirit and Frontier.
Middle class people buy economy tickets on Southwest, United, American, etc.
Upper middle class buy economy plus for a bit more legroom.
Upper class buy first class/business class tickets on flights.
Middle upper class charter flights, or use private luxury travel services
Upper upper class own or have access to private jets.
Poor people don't fly, or fly cheap airlines like Spirit and Frontier.

Because there is no workable business case for it.
It has been tried many times and it always fails because the market of flyers who are willing to pay for the upgrades but can't afford charter or their own plane is not big enough to support the airline investment.

What you describe is basically called first class cabin and most flights have them. Also most flights cannot actually sell all of these seats at the first class price and therefore passengers with airline status pay regular fare seats are upgraded to some of these seats. Doubtful an airline could sell a whole plane full on regular routes on a regular basis.
The above suggests that there may not be the market you think there is for the option you laid out. It's pretty fricking expensive to run an airline so you better be sure there is a demand for your niche.

As someone who flew regularly single and has flown recently with twin children, the two hours cramped in Coach with 150 other passengers is the least stressful part of the trip.

I'll gladly take my crowded 3 hour flight to Denver round trip for 120 bucks over some luxury crap. If I were tall might be different but I'd prolly just make sure I got an aisle seat.

I love JSX for things like this. Their route map is fairly limited to the west coast and a few destinations out of Dallas however.

While I'm sure it was a nice experience, no premium economy seat on any airline becomes a "bed"
