Why don't they change up some of the chess rules to make things more interesting?

Since all these masters have set strategies and 'moves' that are made all the time, throw them a curveball so they have to actually re-adjust their thinking.

How about the knight moving THREE squares up and one to the side? How about letting the bishop pivot and finish the move as a V? what about letting the king move 2 squares instead of just one?

i'm ready to see some x-games chess.

There’s versions of chess out there known as “fairy chess”

The pieces have additional moves as you described

There are already many different chess variants. My favorite is Crazyhouse which steals the "drop rule" from Shogi. Instead of pieces being removed from the game permanently, you can use one of your turns to drop a piece that you captured from an opponent back on the board (even pawns though they can't be dropped on the 8th rank for a cheap queen, they can be dropped on the 7th to promote the next turn).

Fischer Random (Chess 960) is probably the most commonly played one. The back ranks of each player are randomized for each game, making it virtually impossible to do much prep, so it boils the game down to instincts and creativity and not just memorizing lines
