SCH C
can't say it's the best, but it's the easiest and most prevalent.
typical flags are business mileage, meals and ent, home office expense.
the IRS computers monitor schedule c and the type of income you receive, anything out of the ordinary is flagged and you chance a computer audit.

under report income that doesn't have a W-9 or W-2 attached to it. If it has those they already know what you got.
You can claim $0.57 per mile (for 2015) for business driving and $0.45 per mile for driving for medical reasons.
You can deduct private school tuition from Louisiana state forms but not Federal.

Traffic drugs, own game rooms, car washes, or bars to launder. Anything where no one reports receipts.
Only because I watched breaking bad.

Owning a cash-only business that underreports.

"under report income that doesn't have a W-9 or W-2 attached to it."
You mean 1099, not W-9.
W-9 is a request for identification number.
1099 is non-employee compensation.

Do business on a cash basis, skim off unreported income for personal expenses like gas and groceries. The IRS has economists who can estimate what kind of lifestyle you can afford on your reported income, so obviously you'll get caught if you live like a baller on a $50k salary. But if you don't live too extravagantly and don't overdo it, you should be able to squirrel away a few hundred a month. It adds up over time.

Basically any trade should do it.
Everyone except the IRS knows that plumbers, electricians, homebuilders, landscaping crews, etc. make a ton of money.

All the people I know that deal in cash dramatically underreport, not by a few hundred, but by a few 10's of thousands.
They don't live extravagantly b/c their credit is usually screwed.
Ironically, they bitch the loudest about how the government is screwing them.
