Ive done the Chatooga as well, the rapids are better, but there’s too many stops during the trip because of North Carolina laws... Safety line precautions....

There's a metric shite-ton of whitewater in Western NC.
French Broad, Nantahala, Chattooga, Cheoah, Green, Nolichucky, Pigeon, and Tuckasegee off the top of my head.
I've been down the Nantahala, Upper Green, and Lower Green in a whitewater kayak. Been down Sections III and IV of the Chattooga in a raft.
If you want to see some insane whitewater kayaking, youtube search for the Green River Race. Mostly Class V+ rapids with such fun names as "Go Left and Die".

Those stops aren't due to NC laws. Those stops are due to the fact people have died on those rapids. Even experienced whitewater kayakers stop and set up safety on some of them.

By far my favorite. Been numerous times with my son and the scout troup. There is an age restriction of 12+. Our council also required the swimming merit badge. Don't show up wearing blue jeans and hiking boots. T-shirt/swimming trunks/flip flops/tevas/crocs. We have been thrown and that water is cold. Questionable swimmers should sit in the middle of the raft.
An aside, I'm not a Karen who worries about stupid things, I worry about teaching kids that everything will kill them. This is insane.

Not bad. Not as good as the Ocoee but not bad at all. I have family in fort Mitchell area so it’s super easy for us while visiting

Okatoma creek in Covington County Miss would be the closest. Near Hattiesburg.
