Bridge

If you like cards and strategy, Bridge is the top game that there is. You’ll have to play with a bunch of smart old people though - which in and of itself is it’s own reward.

Have you tried Woodworking?

My Dad started it in his 30's. It started as a bit of a money sink, but he always found it extremely relaxing. He gives away all the cool shite he makes, but could sell it and make bank if he chose.

Surprised more haven't said learn a musical instrument.

There's very few things that are more therapeutic IMO than sitting down and playing music.

It also covers pretty much all your criteria, except maybe the economic output. But the benefits far outweigh that IMO.

With music, your costs will typically always outweigh your income because chasing instruments and gear is so hard to resist.

However, if you get decent, you can play in a cover band and make $100/night, 2-300 if you can get on the wedding/casino circuit.

If you can sing and play finger pick, you can make over $300/night singing acoustic in restaurants and bars.

If you learn to work the software and record music, the initial investment is high to make the studio, but then, you can make at minimum $30/hr recording bands once you’re decent at it.

I got into leather making recently. It started with me wanting some better knife sheaths and then I made wallets, gun holsters and several other things. Designing everything is good fun and stitching it up is kind of therapeutic. Plus I've gotten really good at it and I'm sure I could sell the stuff for some good prices.

Also getting into going to the range or shooting guns is a badass fun hobby. Can get kinda pricey if you keep getting guns but they usually hold their value or go up depending on what you get.

Unless you can't, then it is really frustrating. Foreign languages and musical instruments were hateful things. I never could do either.
