Mountain biking. It gets you outside having fun, it's less boring than hiking and it's good for you. When I go riding, it reminds me of when I was a kid and would just go exploring on my bike.
Plus, the mountain biking scene is really laid back and not a bunch of pretentious assholes like the roadie scene.

The editing process is apparently very intense, yet satisfying.
Very. I usually can't wait to get home and process my pics.

I haven’t really started the editing side yet...very new hobby. Still focusing on learning the intricacies of framing good shots and learning the technical aspects of my camera, lenses, aperture, ISO, light, etc... Been trying to get as much free advise from YouTube and the internet as my free time allows. Thinking about signing up for some classes though.

i'm replacing a hobby that netted me over $1k/month so that's a difficult question
Stock Market then? I've been trying to plan (in research stage) on how to trade more as a hobby. Forcing me to stay up with economic/political news more. Which I deep down love as a mental stimulus.
Not day trading cause my regular job would get in the way. Weekly/bi-weekly/monthly. How to handle the taxes is my biggest hurdle to make sure i'm not screwing myself over. Outside of dealing with the ups/downs caused by the algorithmic computers. Which I feel has hurt the small every day trader.

you and shooting in RAW. Ha. Just messin.
RAW editing is way down the road for him I would think. As he learns. Get him out of AUTO first, and into Program mode, which is a good training wheels. BUT taking a shot of what he likes in RAW to have it to tinker with later is good. Also, to not lose that pic. Otherwise he'll have a bunch of MCs.

I've never shot in JPEG. Always RAW. The final products may not necessarily always be that different but at least I have total control of the entire image.
To me, much of the interest comes from editing. Composition comes naturally after a short while.

I really love being an observer though, which fits my hiking/kayaking/photography lifestyle. It's incredible how the mind works in places free of man, and with the ability to be creative, like photography.
definitely good stuff. Getting into the kayaking part, as I'm trying mix it with fishing.

I like moving around between islands. Lots of marine life and I usually pack my camera.

Unless you can't, then it is really frustrating. Foreign languages and musical instruments were hateful things. I never could do either.

This. I bought a guitar a few years ago, after months of no headway i said fk it and sold it
Nobody "can't". Sure some will be more of a natural and have a higher ceiling than others, but anybody can learn how to play a few chords on a guitar or piano. Even that alone is enjoyable.
It's exactly why learning a musical instrument encompasses the things the OP is after (mental engagement, discipline, etc), because it's fricking hard.

If you’re looking for something fulfilling, I would recommend volunteering (if you don’t do that already)
