Photography. There's so much more than just snapping the photos. Working with RAW images and developing them is absolutely a blast and a great way to spend time.

Grow a vegetable garden.
Even better would be a wildflower garden to attract bees and butterflies.

Mountain biking.
Mentally and physically challenging. Added bonus of travelling to new areas.

I went through a phase like this in my mid 20's where I worked out every day and ate "right" and it became an anchor. You're miserable if you step out of line. It's awful

I need goals to even come close to accomplishing anything or staying with a hobby. If I can't constantly measure myself, I lose motivation.
I don't mind that you wake up at 4 to sneak in some poker. But I can see why it might bother a female

Try triathlon. Lots of time to think while swimming or sitting on the bike trainer. Physically demanding to keep you in shape. There's the obvious competition part, but it's at multiple levels....personal, age group, local races, different distances ,etc.. You will get mentally tougher, especially if you venture into half and full ironman territory. And even though its 99% by myself, it's crazy the amount of successful people you network with. It's a hobby for driven people.

Also, check out some of the YouTube videos on Model Railroading. I’m amazed how far it has come with computerized switching, lighting, and even programming of trains and their scheduled running. Some of the guys spend years building a layout and then tear part of them out and start over.
I don’t own any model trains but it sure looks interesting.
