WS will definitly need to bring in some first class server talent even if he has to pay them a little more.

Start with a limited menu until the kitchen and the staff get consistent, then start bringing in other items as specials.

Keep the beer cold and take a chance on some unique local taps.

Always have a $5 burger and a $10 meat and three on the menu. It's a college town after all.

Never could understand why people who have a long running successful restaurant allow it fail. What I mean is I know how it happens. They jack prices up cut the quality of the food and cut wages which makes it impossible to hire decent staff. The average person who has never worked in that industry knows this. Yet we see places that do this all the time and it eventually kills them. It is so easy, once you are established and have a good reputation you just have to continue to maintain your quality and service and you will never go out of business.

He said he wants to keep it similar to the original concept (that’s one way to keep remodeling costs down).

So I guess Sunny’s Bar and Grill should be open in a month or two?
