Even if he does make the pledge once he breaks it the judge can say that he made the pledge before and broke it so she's not going to honor any more.

Yep. She's using his own unwillingness against him. She knows he won't pledge anything because it's what his sovereign citizen playbook tells him, so she's making him put it in writing if he wants to come back.

They wanted to make sure he could see the jury from the other courtroom.

Assuming they would have normally spend 10-15 mins doing admin stuff in a normal trial, he has successfully wasted an hour today.

Question on deliberations. How quick could it conceivably be?

I would assume there’s some time needed in order to comply with all the instructions? Or could they get in a room, elect a foreman, take a vote and be done?

I think they normally do an initial polling of the charges after electing a foreman. It won't be an immediate verdict because there are 76 charges but I think it will be pretty quick. Maybe even today depending on how quickly they can get through everything now that he is in the other room and won't ever pledge to come back.

There's 76 charges worth of paperwork to fill out... plus lesser included charges

That alone will take some time
