In all seriousness, look into just getting her the iPhone X for Christmas. The pictures it can take rival that of an actual camera in the same price range.

Got my wife a camera and good carrying bag for it for Christmas. She really wanted one, and we have a trip to Iceland coming up where it will definitely come in handy.
Check into the Canon T6i. That's what I purchased and it should be well under $1,000 (maybe $750 or so).
