i didn't say it had nothing to do with calorie restriction, but is is not as simple as saying "losing weight is 100% about calorie restriction".
there are many doctors and the like who suggest not counting calories and instead limiting carbs and sugars and other insulin producing foods.
Vinnie Tortorich has a good podcast that i usually listen to. He suggests a NSNG (no sugar no grain) approach for all his clients. Granted he is a trainer and not a doctor, but he always has doctors on his podcast advocating the same diet structure.

If you're limiting carbs and sugars, you're likely eating healthier and restricting your calories
You can't lose weight without burning more calories than you consume. It is simple

Hormonal response elicited by the food / macronutrient ratio is also very important
Perhaps the most important part we do not fully understand is the effect of of food on the micro biome (gut bacteria). Probiotics ,prebiotics and greens/fiber are vital.
