My GF is super liberal on things like this and resents having to overpay for a stupid diamond that isn't rare and is controlled by some of the most evil people in the world.
The problem is that there's no real great alternative - it would likely be deemed "strange" by those in her place of work and she's very career oriented. I also don't want to come off as looking cheap.
Would love to see more options emerge - any articles or links or stories or pics of women who have done this? I feel like celebrities would have to lead the way and be vocal about how stupid/evil DeBeers and the diamond industry is.

generally chicks like this love to tell people about how they didn't want or need a ring, so I don't see why she wouldn't just opt out of a ring

Yes, a tradition that is completely superficial, just like most women that would make a big deal about not getting an expensive engagement ring. The diamond industry does have the men of this country by the balls and that's not debatable. The reason for that is solely because many (most?) women are superficial to some degree. This is purely about women boasting and talking shite (in a stick out my hand and show everyone with a smile just waiting for the "oohs and ahhs" kind of way). It's a way to boast without having to say a word, which many women like to do. You put a group of five women in a room for 5 mins and then remove one of them and the other four will constantly talk shite about the one that left as soon as she gets up (women that are strangers, not necessarily friends).

Serious question. If we say that a woman is materialistic because she wants an expensive diamond ring, is there a corollary for men?
I mean, let's be honest. Most men spend money on stupid shite that doesn't have a whole lot of real value. My King Ranch is terribly over priced but frick it. I like it. Does that make me materialistic?
At some point or another, you pick your battles. And for me, the engagement ring was one that I wasn't going to fight. And I don't blame her one bit for wanting a nice rock.

Meh, materialistic stuff for guys typically serves multiple purposes and holds its value. I think Yeti's are overpriced, but I do think they function the way they are advertised. If you need to keep meat on ice, or just have ice for a week in the middle of nowhere then a performance cooler is what you need as it serves that purpose. The same thing with guns (recreation, hunting, sport, protection), knives, fishing gear, performance clothing, etc.

Pretty engagement rings serve a purpose as well.
They provide joy to the wearer and let the world know she is officially not single anymore.
