Probably to avoid continuity problems. If they have to go back and reshoot a scene, the actors hair has to be the same length.

That's probably it. Films are rarely shot in sequence according to the storyline. I'd love for someone to ask Coppola about that during an interview just to see what he says, just out of curiosity.

I had the opportunity to meet her in 2000 at an Andy Griffith Rerun Watchers deal they had at Oak Mountain. She was signing autographs and we got to talking for a while as her line was not terribly long but she was an absolutely charming lady and so nice. The lady who played the Darlings sister was as well. Both of them left the highest impression on me with how they were so easy to speak with and you could tell they cared about the fans greatly too.
