I assumed there was some way softball players did this; I didn't know the specifics.

I'm sure that is probably how it began. Girls who wanted to retain their femininity while playing a sport are probably less likely to be lesbians, I'd guess.
I could see the lesbian softball players using this as a tell that those girls weren't of their persuasion, and then it became a way to differentiate for both sides.
Just shots in the dark here, I'm not some scholar of softball sexuality signals.

I have a friend who played college softball and she said some of the girls would drop subtle hints that they were lesbian by eating each other out in the showers after the game.
