That is the hard part to understand.
From the video vantage, it appears something else may have been happening or about to happen.
Either way...it escalated quicker than the situation appeared to warrant.
Do we know why it appears this way?

Meh I could be wrong, but I think huge guy with a gun on him (esp if they were aware of his violent record), aggressive show of force is a viable option. I'd imagine halting his movement and disarming him is the immediate concern and nice talk is unlikely to do that in many cases.

Because when a cop has his hand on a weapon, everytime I've been around that situation I shut the frick up. That's why.
In my college days, I had multiple run ins with dickhead friends that were dickheads to cops. When the cops showed up you may talk to them some, but when they get serious I shut the frick up and just listened.
That's why I know.
The situation was escalated when Sterling didn't give a frick there was a gun at his head.

Sterling was contained? What does that even mean?
He was in possession of a fricking gun and was not obeying clear commands. He was absolutely not contained, detained, compliant, or any other made up BS adjective you wanna use to mitigate his behavior.
Do you realize how fast someone can pull a gun and shoot you?
Salamoni came to the scene to do 1 thing. Get the firearm. After that, you deal with everything else. Sterling was not allowing him to retrieve the firearm.
You don’t allow a POS like that to keep a firearm during the encounter. You do that, and you’ll be the dead one soon enough.

The situation didn’t start when BS arrived.
It started when a man selling CD’s in front of a store pulled a gun on someone.
Go out pulling guns and folks and you might get shot......unfortunately for Alton that is what happened.
More times than not your choices have consequences.
I’ll agree that BS came in hot but Alton caused this himself by his choices.
