Purchase parts and expect me to put them on...

In what world is this normal to do this? Or for that matter to get pissed off when I won't install your parts you purchased from cheap arse Amazon or Temu site.
I don't bring my food to a restaurant for the chef to cook...
I don't bring my medicine to a doctor's office to treat me with...
What's board's opinion on buying stuff and expecting a business to install them for you?

There's plenty of restaurants where you can bring them a fish and they'll cook it up.

Some places charge a huge markup on parts. If I can get them cheaper than the repair shop why not try to save a little.

I had to read this a few times to figure out what the hell you are talking about.
In this case, you are the mechanic and someone brought you an alternator and asked you to swap out their old one? Charge them for your time and swap it out. This isn't a big deal. Need more context.
I've taken a guitar to a shop with new pup's I bought online and paid them to install them because it turns out I can't solder for shite.

I guess it depends on what exactly we are talking about. But I heard of people buying things for there cars and trucks and having them put on by a 3rd party and basically the deal was he got charged an hourly rate but would offer no warranty since the parts did not come from said shop.

Do it, charge them appropriately, and gain a customer.
Why do you mark up parts you didn't manufacture? See how that works

Changed out fans, receptacles, etc…. They buy exactly what they want and I figure out how to put it in. If they get the wrong thing…. They can return and get the right thing. Easier on me.

I’ve purchased tires online and then went to a shop to have them put on my car. It was a pretty easy process.

Ensure the customer understands there is no garuntee for fitment or useability nor any warranty, yet the time expended must be paid.

I never do this, as I know the 5% or whatever markup the installer charges over wholesale is fine. I also know that people installing shite from a source they don't trust essentially means their work can't be warrantied.
The only exception is the frickers that replace my watch battery (it's a Tissot, I already tried buying a repair kit and doing it myself, and just scratched it up.) I don't want your shite Temu batteries that last five months, so I bought Duracell lithium batteries, and they will replace it (at full price) or they can also get fricked seven ways from Sunday.

Tire Rack installers are partners and get a cut in one way or another. It's a different arrangement. I still wouldn't do that unless shipped directly to the installer, so they can inspect them and refuse them if there's anything wrong.

The markup includes the costs they incur when they have to change out parts for warranty claims. It is a bit like insurance.

If they can get the part cheaper than what you quoted and you’re still gonna charge labor, why do you give a shite? Tell them if it doesn’t fit I’m still charging you shop time and leave it at that. Odd hill to die on.

Charge a premium and offer no warranty

Why is the OEM not reimbursing the shop for this, and if they aren’t, why wouldn’t the shop refuse to do warranty work? OP’s obviously not at a dealership.

Expecting? I contract with them to do it. Half the providers/vendors I use for various stuff give me the "I can get it for you, but it might be easier just to go to _____ and get what you want and I'll take it from there."
I think whatever you're in is an outlier in this regard.
