Professional Videos with Cellphones?

Might be more of a tech board item, but I'm noticing a wide array of recording styles in these polarizing viral videos that have been hitting the web.
Now I may be a shite videographer, but I don't know how you can hold a phone steady enough to have a perfectly tracked video where everything stays in the video and there's no wobble as someone moves around and whatnot.
I have a Google 2XL that was I think $900 dollars, but when I use it, my shits bouncing around and everything. How are these people who just happen to be in the right place at the right time all able to be steady-handed and have near perfect spatial awareness, focus and everything.
Guy in a truck trying to take a video and he can barely keep the guy he's trying to video in the camera frame. another guy is running around in the park and seems to perfectly be able to hold an image in place...tin hat?

There's a movie called Tangerine that was shot with iPhones and it looks about as good as any other independent film.
I imagine they used tripods... in fact, I know they had two tripods on-set the whole time!

Give me enough time and the right software and I can make a topnqualoty movie with my phone. The camera isn't the issue, it's sound and lighting that's the biggest challenge.

They use a gimbal.
ETA - just realized you are talking about the NY birdwatcher. It’s not that difficult to film someone standing. Trying to film a moving target from a moving vehicle you are driving is a different beast.

Cameras aren't as important as the equipment around them. A good shoulder rig, gimbal, steadicam, jib, or dolly will do a lot for the look. It's also easier to stabilize if the footage was fairly steady to begin with.
A poor-man's gimbal is to attach a tripod and then hold the tripod in the air by the legs. Phones are so light that they have too little inertia to provide steady footage by themselves. Adding mass will make it easier to get steady footage.

Do a quick check of viral videos on YouTube vs tiktok/Instagram.
The framing, panning, steadiness. etc.
See shen she walks up to him, it's like he was using a tripod....which might be what he was using for bird watching.
