Just start in Greenville, hop on I-385 to I-26 and see Columbia and Charleston. It is basically a perfect NW to SE line from one corner of the state to the other.

Then, once done in Charleston, hop on Hwy 17 and go to Savannah, GA.

This is true too. Some of the best food you'll find in the South will be in the rural and small town areas.

For Mississippi I would drop by Oxford and Ocean Springs. Bay St Louis/Pass
Christian is close to Louisiana and would be worth a stop if you are going to be on I10 or Hwy 90.

Definitely New Orleans, don't see any need to waste time in Baton Rouge

If you are going that far you might as well hit the Florida gulf coast area around Destin and 30A area.

I'm from SC & have lived in NC for many years. You have the SC part right. You'll love Asheville. Charlotte is kind've boring. Aside from the NASCAR museum there's not much for a tourist to do.

Logistically, you could do something like this:

-Tobacco road>Charlotte>Charleston>Savannah>(drive pass Macon)>ATL>Chattanooga>Nashville>Memphis>Oxford>Nola.

That route at least somewhat makes sense.

Sounds great! Blue ridge parkway in North Carolina is probably the most scenic drive in the south.

Nashville, Asheville and New Orleans are must-visits. You may want to consider leaving out Louisiana and just going to Kentucky, Tennessee, the Carolinas and Georgia to limit driving time.

And gatlinburg is a total tourist trap

Mobile? - Not too bad. I wouldn't go out of the way, but I wouldn't hate to spend a day there. No more than 1 though.
Montgomery? - Never been.

Mississippi:
Oxford? - If you can somehow route your trip where you're driving to Memphis and can stop off in Oxford for lunch to check out the campus and Square, then do it. You can see it all in 2 hours though.
Jackson? - No.
Tupelo? - Never been.
Biloxi: Like Mobile...you can spend a night there.

Louisiana:
New Orleans? - Definitely.
Baton Rouge? - God no.

Mississippi and Alabama pretty much suck. The only place I'd stop would be the coast.

I'd focus on NC, SC, GA, LA, TN, and AR only. You can skip LA North of Alec on your way to AR
