Fat was once considered desirable, as it meant you were of a social class didn't have to perform arduous manual labor (similar to the prejudice against suntans -- which gave us the term "redneck" -- that existed until the 1920s). In less than 20 yrs it became desirable to be thin.
Any guesses as to why this switch happened? Perhaps it was connected to the shift from farm labor to office work
