There are a ton of options, don't pay attention to the prices from these manufacturers too closely because most of them are available from places like Jomashop with deep discounts. One thing you can also do is look at much more expensive watches and find something you like then ask for cheaper watches that are similar.
try to find something you like so we can go from there, people will know a lot of options when we get a feel for your eye.

I beat the shite out of mine. Bought mine for myself when I turned 40, and I likely won’t ever buy another watch. Just is what is.

I really like the last one which is a Hamilton Railroad with a sub-second dial. I like it because I like anthracite color dials and I think the sub-seconds sets it apart from the crowd a little. I might replace the strap though.
One note about a lot of the dressy watches is that they lack lume, which may or may not be a killer for someone.

I just want to do both... and timing. Really want to have something for this weekend/next week.
Seriously, I have never (outside of maybe 5-7 days) worn a watch in my life and I'm dead-set to do it now. But obviously not doing a higher end one on this timeframe.

Not a watch guy by any means. Inherited all of my late father’s watches but still only wear a sand colored G-Shock that does the trick
Never heard of Hamilton before but those look great. Might have to ‘class’ it up soon on the low-end of watches. Those are definitely affordable.

One more option which is pushing your budget a little but gets you a watch that is a IYKYK kinda watch and will catch the eye of any watch geek, in other words it is special for the money.
The Nomos Club 38. They have multiple colors. The only issue it is 38mm but it is all dial so it wears large. Smaller watches are very in these days and while 38mm is not small by most people's standards it still might turn some off. Since you don't wear watches before considering it I would make a paper approximation and consider it.
This watch has an in-house mechanical movement, it is manual wind so that must be considered but it is one of those watches that punches well above its price in a number of ways. You also aren't going to get one in a couple of days but it would be a very nice watch to start a collection with. $1650

Seiko sarb would be my choice. Gaston loves German pilot watches. They’re cool, but they’re more of a casual watch. Im assuming you’ll be wearing a suit to this event, so get yourself a dress watch.

I'm on board with the Tissot offerings mentioned and linked by Obtuse 1. I just came back from Europe and saw several of the Tissot PRX and Tissot Gentleman's in person and was impressed.
I think if you can get your hands on one on your timeline, the Seiko SARB0035 is an excellent choice, especially the creamy white dial. 37 or 38 mm, looks similar to a DateJust or Oyster Perp but with Dauphine hands. It does have a date window at 3 o'clock unlike an OP. The cream dial is lovely.
