Cookout is more of a burger place. With sides of corn dogs and chicken nuggets. With a milkshake. Perfect drunk food.

Agreed. I’m not even a Pauley’s fan whatsoever. It’s a niche that they filled to perfection. Where else in Athens can you get crepes? Nowhere. College kids like feeling “cultured.” Crepes can be pretty damn good. Throw alcohol into the mix. Boom. Successful business venture.

A food truck can work. It takes a frickton of work but in the right environment where people are used to trucks it can do nicely. I know someone in the DC area who started with a truck about ten years ago and now has ten B&M restaurants. He literally worked every waking hour seven days a week of course. 100 hour weeks were quite normal.

I know someone else who is making the transition to starting the first restaurant. Pretty much the same story.

FWIW both are immigrants. One from Mexico and the other from Afghanistan.

The ROI on selling snacks is high with very low food costs.

Yes. Snowball stands sometimes have GREAT pretzels. As well as Frito Pies, Sour pickles, etc. So yes I would go.
