Tough choice between the Rolex Explorer II and the Omega Speedmaster Professional. I love my Speedy Pro, but I lust for the Explorer II...it's going to be my next purchase. Can't go wrong with either one.

Not a big fan of the 3570 as an only watch but some people don't mind keeping the crystal polished and some just let it go, I can't do that and the only plexi crystal watch I have left is a Monaco.
One thing to note is the 6 digit Rolexes make switching the bracelet own and off a pain. The end links are so tight you just about have to use springbar pliers and then it isn't easy. The Horofix ones are good but not overly pricy @~90 bucks the Rolex ones are hard to find and well over $500. I recommend the Bergeon 7825 if you plan to use them a lot.
While I really like my EXP II I think the GMT is a better daily either a Batman if you get a current one (unless you want to pop for the Pepsi but then you could just buy the APRO).
Based on what you want to do I would probably look for a 1675. It will be quick to switch from bracelet to leather, rubber or NATO and bought well will only be worth more in the future.
That said a 3570 will be less money and if that is where your heart lies then go for it and pick up some polywatch at the same time.
BTW sometimes grails are bet left as grails...

I would never argue against a Tudor Black Bay (but I prefer the 1st gen with the Tudor Rose). In all honesty, I think I enjoy them more than the Rolexes.

Go old school with a pocket watch. The Patek Caliber 89 is available.

The "new" MT5612 movement is excellent but the older ETA based movements are so much easier to get serviced. I think if I was buying one today I would get the LHD "destro" version. Yes. Under the hood they are the same watch with the 1st gen having modified ETA movements and the second gen having the in-house MT5612. Despite the difference between stainless and Ti, ceramic and aluminum bezels and 200m vs 500m water resistance I see the choice between the two as primarily a visual one.
I think the Black Bay, particularly in black is a great watch for either an "only watch" or small rotation. It is a great homage to the gilt big crown Tudor subs and the French Navy snowflake hands make it clear it is not a Rolex. The 41mm size seems to work for most everyone. The Blackbays all look good on leather, NATO, Perlon or the bracelet. Considering when you can pick up excellent ones for between $2100 and 2400 the Blackbay is really a no-brainer.

I almost mentioned the Blancpain 5015 but that seemed to be pushing his budget quite a bit as well and pushing closer to his APRO grail.
While I love my FF the 45mm size is beginning to push it for a lot of people. The sapphire bezel is pretty darn gorgeous though.

There won't be many people who even care to comment on your watch. In fact, the ones that do will be inclined to do so only because you make it obvious that you wear an expensive watch. So just buy whatever makes you feel good about yourself. Sounds like you are going to push the upper limit on whatever you can afford anyway so it is your call man. Nobody else ia going to care if you wear a Fossil or a Rolex.
