While it has been established that OP has zero need for a 3 row SUV, the Pilot actually has pretty adequate rear cargo space with the 3rd row up for day to day activities.
My old frathoe was a joke as far as cargo room with the 3rd row up.

adequate being the operative word. You can't take a vacation with the 3rd row up in a Pilot. You get basically double the cargo space with the Odyssey.
Yes OP doesn't need 3 rows yet, but they may have more kids, or may want to travel with grandparents/friends/etc. A minivan is a no brainer over pretty much any 3 row SUV unless you need to tow a large boat or something like that.
ETA: I also put my money where my mouth is and bought an Odyssey last year

We have both. We have a 2019 Pilot Elite and a 2024 Highlander XLE (Wife's company car).
The Elite has 72,000. Zero issues with it so far. Super comfortable ride. Little road noise. The Elite has all the bells and whistles. Used the 3rd row when the kids were younger, but since they are driving now, it is rarely folded up.
The Highlander is brand new (483 miles). This is not a supped up version, but even the XLE comes with a ton of features (no memory seat though). This is the Hybrid version and so far we are getting near to 45 mpg. It's responsive, a bit more road noise on the interstate, and the seats are not as plush. However, it feels roomier than the Pilot on the inside.
I don't think you can go wrong with either of these choices. Might be unloading the Pilot for a used Lexus sedan since we really don't need two suvs.

I agree. Back in the toddler/lower school days wife had a Saturn Outlook, which was the Acadia. I had a Landcruiser, which had a third seat.
The Outlook was the best road trip with kids car I have ever owned.
2nd row Captains chairs, third row that folded down. A dream.
We were literally talking about how much we liked that car last week.

You can fit two large suitcases and 2 carry on size suitcases in the back with the third row up. And that's not even counting the under floor storage that's good for another carry on sized bag.
The odyssey is bigger, but not required for road trip vacations.

So not enough luggage for the number of seats, like I said

And god forbid someone wants to bring some golf clubs on vacation in the Pilot

You need something with the heart of an exotic sports car topped with 3 rows of the finest japanese sports car and people hauling heritage.

We loved my wife’s cheap minivan with two kids a few years apart. Got it when the second was born. Bought the Dodge instead of Honda or Toyota. Lower quality for sure (and lower price) but gave us 10 years of service and about 180,000 miles. Something was bad wrong with its transmission when we got rid of it. Was a great roadtrip vehicle.

Speaking from experience having something wider that you can comfortably fit 3 across in the back with the baby seat in the middle is what you will use 99.9% of the time. You aren't going to stick the baby in the 3rd row and not adult wants to sit in the 34rd row.
