A coyote isn’t exactly impressive.
My money is easily on an able bodied adult man over a coyote. It’s not a wolf. It’s not a pit bull or shepherd either.
And that video doesn’t appear to be actual coyote.

Saw a video over the weekend of a dude saving dog from being drowned by a kangaroo. That is a damn fool for fighting a kangaroo.

lots of them around where I live and most of them look pretty healthy and well over 35 lbs., I think they’d prefer to be left alone and I do, looking at the video on my phone but I don’t think that was a coyote

What a disgusting situation.
Dogs were kept for centuries, as a protector of their Masters. Fending off wolves and other dangerous potential attackers.
Back in the Middle ages, Travelers would place their valuables in a pouch and fasten it to a Rottweilers collar to prevent robbers from attacking and stealing his valuables.
Now the wimpy dogs have to be protected from Wiley Coyotes. Sad, sad.

Yeah, that is far too dark to be a coyote and doesn’t have a bushy tail. Have to say, the dude jumped right in and dominated to protect his dog.

Yea. A dog the same size as the other dog hauls arse and the owner has to deal with it. His pussy dog ran. Decades ago his dog would have got shot by the owner because it's trash. That's the truth.
If a hunting dog couldn't hunt, it was killed. That owner has a pussy dog. If it was a toy I could understand but it was the same size as the attacking dog and ran. Put it down. Don't need that trash.

What are we talking about here? An able bodied man getting torn up a bit and the coyote fleeing the encounter still able to walk? Sure, maybe. But 180lbs vs 35 pounds is going to be a tough out for the coyote in any sort of prolonged encounter.
There is a reason you rarely hear of grown men getting killed by coyotes, pit bulls, even black bears (especially compared to fatalities for women/children).

I was on my deck one night when I heard my Aussie get into a skirmish in the woods behind our house, I thought she had just tried to grab a possum that had some fight in it. She comes out of the wood line with two coyotes circling her. She fought them off and made a run for the deck but they circled her again. Now she's a 45-pound Aussie in her prime and full of piss and vinegar. but two against one was tough. As soon as as I realized what was going on, I came flying off the deck. The coyotes saw me coming and disappeared, like ghosts. One minute they were there, circling, the next minute, they were gone. I got her to the deck. She was alright and wanted to go after them now that the odds were even.
No love for coyotes. None.
But I do applaud the guy for protecting his pup.
