Speaking of life changing foods, I had a similar experience this weekend as well.
I’ve always grilled steaks in the standard way on my charcoal grill. But this weekend instead I tried pan seared/baking t-bones. Holy shite was that absolutely delicious. I’d heard a out doing this for quite some time it have never tried it. So on a whim, I did it. And it was super easy.
1. Preheat oven to 450
2. Preheat skillet on stove eye
3. Add 3 tbsp olive oil to skillet
4. Once oil starts to smoke, reduce heat, put in steak.
3. Sear on each side 3 minutes
4. Move skillet to oven for 5 minutes.
That’s it. And it’s damn good. I like my steaks med rare so if you like yours a little more done just adjust cook time.

That's been the only way I've cooked steaks for years now. The Alton Brown method. Only difference is I turn the oven on as high as it will go and stick the skillet in while it is preheating. Then when it reaches temp, pull out of oven and follow your method on stovetop and back in oven.

The batter would start burning before you would dry the meat out
