That's the problem. I cook. My wife really doesn't and my friends just grill...

Choice of chef's knife? I prefer Global.

Is she going to be there during the cooking process? If so, make something simple that goes with wine. At least so yall can drink while she watches you cook.

How many courses are we allowed?

Let's say five because that's what I usually shoot for and my wife is comfortable with five.

So tomorrow night for the wife I'm doing ...

A bruschetta topped with a little bit of mahi-mahi, oil, shallots and capers.

A simple green salad, greens fresh picked from my garden, with shaved parmesan and a lemon-raspberry-oil&vinegar drizzle.

A risotto top with a single seared scallop.

Braised lamb shank with roasted potatoes. (I have some leftover from the holidays)

For dessert ... pear slices dredged in lemon, honey and peach juice and topped with a slice of fontina (unless you can find some Gruyère) cheese. Stick it under the broiler for a second or flame it with a torch to glaze and carmelize the sugars and cheese.

I have a decent set of Henckels but I would like to pick up 1 more good chef blade.

It was just a hypothetical. I'm not looking for suggestions on what to cook Ms.Scoob.

I'm curious as to what the OT is good at preparing and needed a way to phrase the question.

Red wine braised short ribs over cheesy grits/polenta.

They're served in nice restaurants; rarely in people's homes. But they're so easy to make. Also. You make them a day ahead of time, pull the layer of fat off when they're cold, and reheat. 10x better and you're only in the kitchen for the reheating/making grits.. 30 minutes max.

Paige, you did do great.

I don't know you but I would think it showed some personal growth putting yourself out there like that and also declining to share some details whereas a previous version of yourself would have cringingly overshared.
