Now I want some Cherrybomb Coffee. I love a good start-up story, and this guy was roasting beans in his parents' garage when he was a 19 year old student at Southeastern.
And I'm sorry Highland Coffees may suffer, but they can also add some things or change their business model to attract different customers. I don't care if Walgreens and CVS are at the same intersection, I will still have a preference.

fills a specific need for that part of campus in that it's a workspace and historical mainstay for students and others that happens to serve coffee as well
where did you come up with this "need"?

raise prices

owner also does a lot of positive things for the Northgate area outside of just his shop as well
might need to roll back those positive things if he can't afford to do so

It's totally within Cherrybomb's rights to open a location as close as they please according to the current laws and regulations

GET OFF YOUR DEAD arse AND BE CREATIVE!!!
If Highland changed or tried to maximize its income, it would look just like every other trendy Chip & Joanna coffee shop in town and lose a lot of its character. It's a unique spot because they haven't followed the trends and have been open for 4+ decades now, which is a good thing, and I say that as someone who frequents and enjoys just about all of the shops in town on a semi-regular basis.
The only things I would do as the owner would be to have higher quality food offerings as well as increase prices to help make ends meet a little easier, but I believe he's hesitant to do so as to not raise prices on students as much and to not raise a stink from his regulars, for better or worse.

Parking a coffee truck outside of the a coffee shop is pretty low and tacky.

Highland Coffees has seen an increase in the number of people who visit the shop and use its WiFi while sipping on Cherrybomb drinks, “which is difficult for us to handle as employees who can’t allow that but don’t want to cause a fuss.”
Absolutely should not allow this. You can politely say that you cannot sit in our restaurant/coffee shop eating or drinking outside food. That is totally normal. Just say it in a very sincere, kind way.

FIFY.
I don't give a frick if someone did that to Starbucks

Semantics. Need/niche, same thing. I mean a neighborhood technically doesn't "need" parks or libraries, just like the Northgate side of campus doesn't technically need a place like Highland, but both certainly provide positives to their respective areas.

Agreed, I've been saying for a while that he should raise his prices.

Who said it costs him anything to do those?

I didn't as this is the first I've heard about it and honestly, that petition isn't going to do anything anyway.
I'm just familiar with their business and the area because my wife worked at Highland for a few years when she was at LSU and I know Clarke decently enough as an occasional customer.

In my post I mentioned being creative as in not having a loser attitude.
It implies having a winner’s attitude.
Or you can be a dinosaur headed for extinction.
This is a distinct choice that all businesses experience at some point.

Now that state employees are back in the office full time, they should relocate to downtown. The only decent coffee around North Street is from the Cuban truck (Elisa's).

Drinking coffee in middle school? Is that a thing now?

You suggested to:
Do you ever go to the local coffee shops? They all sell generally the same shite, including Highland. Hot or iced lattes, cappucinos, mochas, pour overs, cold brews, frozen coffees, etc. etc. Cherrybomb isn't doing anything revolutionary, and I could guarantee you that I could make just as good of an espresso drink at home with my Gaggia setup as they do. They just happen to be a new offering and are basically Lighthouse coffee but in an Airstream. Probably makes solid drinks, but the biggest differentiator for most of these places is usually proximity.

I like the concept of Cherrybomb but will never support them with the proximity to Highland Coffees.
Another location sure.
I can’t imagine being so shitty to buy a coffee from Cherrybomb then log on to highlands WiFi and sit in their courtyard lol

but it's also why local pharmacies are no longer a thing and have been all-but-replaced by soulless CVS and Walgreens, for example.
what a piss poor comparison. Is Cherry Bombs a national chain or some huge corporation? They're a local small business too, that

This is just a case of the red arse by someone because their favorite coffee shop has competition. Boo Hoo. Deal with it.
